Here is my favourite recipe to use up over ripe bananas. It’s super quick and easy and it doesn’t have a ridiculous amount of sugar thanks to using quite a few sweet bananas.
4 large very ripe bananas mashed
1 egg (beaten)
½ cup sugar
⅓ cup your preferred oil (I use veg oil)
1½ cups self raising flour
Mix together the mashed bananas and beaten egg (or I just crack the egg into the banana mixture and beat it on the side with a fork then mix through). Then mix in oil and sugar. Then finally mix in the flour and pop into a 12 muffin tray (or you can do a banana loaf or mini Muffins). Cook in a 180 degree oven for about 20 minutes or until a skewer comes out clean. Yum! Dust with icing sugar if you’re feeling fancy.
