Things are getting a bit spooooooky around here 👻🎃. I was very excited to be asked to collaborate with my friends at T2 Tea again to create some creepy cupcakes! They are so tasty. Recipe below if you want to try making some too!
Spiced Pumpkin Chai Cupcakes
Makes 12 cupcakes
225g plain flour
2 tsp baking powder
1 tbsp finely ground T2 Chai Loose Leaf tea (use mortar and pestle or spice grinder)
100g caster sugar
50g brown sugar
2 large eggs, lightly fork beaten
125g melted butter
200g pumpkin purée (canned or freshly made)
Heat the oven to 350 F (fan forced) and prepare a 12-hole muffin tin with paper cases.
Mix all dry ingredients including the finely ground T2 Chai. Using a whisk or spatula to help break up any lumps of brown sugar or you can rub them between your fingers.
Whisk the pumpkin and eggs together, then add to the dry ingredients and the melted butter. Keep whisking/beating for a couple of minutes until combined.
Bake for 15 to 20 minutes until golden and a skewer inserted comes out clean. Let cool completely then ice with buttercream or cream cheese icing. Decorate them with fun Halloween colors and designs
